美肌の湯とも称される嬉野温泉は、飲用にも適し、さらには温泉を使って炊く温泉湯どうふは、嬉野を代表する名物。温泉水で豆腐をコトコト煮込むと、煮汁が豆乳色に変わり、とろとろに仕上がる。これは温泉の絶妙な成分バランスが、豆腐のたんぱく質を分解しているから。その食感と味わいは、一度食べるとやみつきになる。飲めば胃腸にも優しい温泉水と、健康食・豆腐との見事なコラボレーションだ。

温泉のあれこれ

シーボルトら外国人も入湯した藩営浴場
長崎から江戸への途上、嬉野温泉に様々な人が訪れた。1826年、シーボルトはオランダ商館長の将軍謁見に随行し「江戸参府紀行」でこう書き残した。「古湯の公衆浴場は、竹の生垣で囲まれたワラ葺き屋根の簡素な造り。見張所や休憩所を備える。浴槽は長さ6フィート（約183cm）、幅はその半分。湯の色は透明、臭いは弱いが硫黄を含み、湯温は90度超、卵が数分でゆで上がった」と、湯の感想よりも、学者らしい記述が目立つのが面白い。
