温泉の初夏の風物詩「つけば料理」
戸倉上山田温泉は、千曲川産のハヤ（ウグイ）のつけば料理が名物で、初夏の風物詩。つけばの本来の意味は、春から初夏にかけて千曲川にできるハヤ漁のための仕掛けのこと。戸倉上山田温泉の緑地公園内のつけ場小屋では、天然のハヤを塩焼き、山椒味噌で田楽にした焼き魚「魚田」、天ぷら、唐揚げなどで食べることができる。ハヤは産卵期になると餌を食べないため、内蔵はきれいで、川魚特有の生臭さはなく、淡白な味だ。
