五感で食べる朴葉味噌
朴葉味噌は、飛騨高山地方で古くから親しまれてきた焼き味噌のレシピ。朴葉の葉に甘めの味噌を乗せ、その上に削り節、ねぎ、しいたけの細切りなどを乗せて一緒に焼きながら食べる。他の器では出すことができない香りや味、そして味噌が焼ける音までもが五感を刺激し、食欲をそそる。具にこだわらず、好きなものをのせて食べるのが飛騨流。最近では飛騨牛をのせて食べるのが人気で、お土産用の味噌と朴葉のセットも販売されている。

日本三大朝市のひとつ、飛騨高山の朝市
飛騨高山の朝市は、日本三大朝市のひとつ。江戸時代の「市」がルーツで、明治時代中頃から農家が野菜を並べるようになり、現在では陣屋前広場と宮川沿いの2ヶ所で毎朝開催されている。地元で採れたての野菜類は安くて新鮮。さらには手作りの味噌や漬物、民芸品などが揃う。食べ歩きも人気で、飛騨牛の串焼きや醤油味のみたらしだんご、飛騨高山朝市限定のソフトクリーム「飛騨桃ソフト」や「地酒ソフト」など、よりどりみどりだ。
