奥道後温泉の一軒宿ホテルの名物食材が、「鴨頭葱」。古来より、滋養強壮に役立つねぎとして珍重されており、奥道後ゴルフクラブにある農園で栽培に成功した。結んで酢味噌につけてそのまま食せば、ねぎの辛味とほのかな甘みが口いっぱいに広がる。ねぎ臭さも少なく、酒のあてにも最高。夕食時に追加料理として提供される。ホテル内で販売もされているので、お土産にしたい。
